I hate Mondays, but I’m sure you’ve heard that one before. The only thing worse than a Monday is the dread you feel on Sunday night. Back to work. Back to the mundane. Back to waking up at 5am to drive over an hour to work. I cherish my weekends and days off like nobody’s business. And let me tell you, after having a four-day weekend, I can officially say it must be Heaven on earth to be in retirement.
I try to do everything I can on the weekends to make my weekdays easier. That means laundry, cleaning, and meal prep (when possible). The Monday after a vacation, albeit a mini one, is always rough, so I’m leaning on my no-fail, tried and true, favorite crockpot recipe to get me through.
Take-out Fake-out Beef & Broccoli is a delicious homemade version of the Chinese dish you can make right in your Crock-Pot. I love those make it while you sleep dinners – virtually no work. Seriously, this dish couldn’t be any easier, unless I made it for you. One pound of tender beef soaked in heavenly juices for several hours, tossed with crisp broccoli, and poured over jasmine rice. Voila. Can you say mmm…good?!
It takes about 10 minutes to prep and assemble in the Crock-Pot and 4-6 hours to cook. Of course you can cook the meal at any time of the day, but I prefer overnight. As soon as I wake up from my oh-so-short slumber, I turn the Crock-Pot off, let it cool, and stick the container in the fridge. When I get home from work, it’s super easy to finish the meal – adding the cornstarch to thicken the sauce, tossing in the broccoli, and pouring over the pre-cooked rice. Dinner is served without any stress. Happy Monday to all!
