Cupcakes for 2


Cupcakes are fun.  For me, it’s not about the actual cake, but the toppings.  I want them to be pretty and appealing to both the eye and the stomach.  It’s my favorite type of art:  edible.  Don’t get me wrong, the cake is key, but the fun part comes after the oven.

I really like experimenting with different designs and frostings, but hate “wasting” a whole batch of 24 cupcakes just to play around.  And most of them do go to waste because, seriously, how many cupcakes can you eat in a few days?  Wait.  Don’t answer that.

Well, I did some searching on Pinterest and found a solution.  I don’t think I’ve ever gone on Pinterest and not found a solution!

Did you know that you can make just two cupcakes from a cake mix?  So awesome and useful.

I’m not one for making boxed desserts, or boxed anything for that matter.  But, there comes a time when we just need to have a cupcake or want a dessert in a pinch and boxed is the answer.  I found a few recipes, but decided to experiment on my own.  Below is the simple, 4-ingredient recipe I landed on.
